Chewy London Fog Cookies

For those of you who don’t know, a London Fog is an earl grey tea latte spiced with vanilla steamed foamy milk. This is my cookie version of this warm, comforting drink.

These delightfully chewy cookies are speckled with vanilla bean, ground Earl grey tea and rolled in a spiced sugar. Chewy London Fog Cookies pair well with a warm latte and a cozy rainy day.

Ingredients
  

  • Cups All-Purpose Flour
  • 1 tsp Baking Soda
  • ½ tsp Cream of Tartar
  • 1 ¼ Cups Sugar
  • 1 Cup Salted Butter Room Temperature
  • 2 Egg Yolks
  • 1 Whole Egg
  • 1 tsp Vanilla Bean Paste
  • 2 tsp Earl Grey Loose Leaf Tea , Finely Ground

For Rolling

  • ¼ Cup Sugar
  • 1 tbsp Earl Grey Loose Leaf Tea , Course Ground

Instructions
 

  • Preheat oven to 350 °F
  • Combine all-purpose flour, baking soda, cream of tartar and whisk until incorporated. Set aside.
  • In a mortar and pestle (or food processor) grind earl gray leaves into a finely ground powder, sift through a fine mesh sieve.
  • In a stand Mixer, Cream together sugar and butter. Then, Beat in egg yolks + whole egg, vanilla, and 2 tsp of finely ground tea leaves.
  • Slowly add the flour mixture to the wet mixture, blend on low speed until just combined. Make sure to scrape the sides and bottom of the bowl to get any dry bits that haven’t been incorporated.

Rolling Sugar

  • In mortar and pestle, combine sugar and loose earl grey tea until they are both blended and aromatic. (you're looking for a course ground tea, to create those larger specks on the cookie.)
    ¼ Cup Sugar, 1 tbsp Earl Grey Loose Leaf Tea
  • using a 2 Tablespoon cookie scoop, measure out cookie dough and roll into sugar mix.
  • Place dough about 2 inches apart on the baking tray and bake for 15 to 17 minutes or just until the edges or the cookie are golden and set.
