Equipment

  • Stand Mixer
  • Medium Saucepan
  • 9x13 Baking Dish

Ingredients

  • 1 Cup Water ,(Divided)
  • 4 Tbsp Grass-Fed Gelatin  / I use -perfectsupplements
  • 1/2 Cup Maple Syrup
  • 1/2 Cup Cane Sugar
  • 2 Tsp vanilla bean paste (or Vanilla Extract)
  • 1/4 Tsp Sea Salt

Instructions

  • Using butter lightly grease the 9 x 13 pan, then dust with powdered sugar and set aside.
  • In a stand mixer add 3/4 a cup of water, sprinkle gelatin in an even thin layer across the top.
  • Meanwhile, Combine the remaining 1/4cup water, maple syrup, and sugar in a saucepan and heat on medium until sugar has dissolved but before it reaches boiling point. Let the mixture simmer for 2-3 minutes, then turn off heat.
  • Turn your mixer on low (about speed 3) and begin mixing the gelatin and water. Slowly add in the hot ingredients and mix on low until gelatin is incorporated, then add salt.
  • Increase mixer to high speed (setting 7-8). Set a timer 6 minutes. Mix until mixture is thick, fluffy, and looks like marshmallow fluff then add vanilla paste.
  • Once the vanilla bean paste is added, whisk for an additional 4 to 6 minutes.
  • As the timer is complete(the marshmallow should be pourable), be prepared to quickly scrape the marshmallow out of the stand mixer into pan. *Marshmallows set quickly.*
  • Allow the marshmallows the set for 30 minutes up to 12 hours uncovered. Enjoy!
